Mushrooms in white wine with cinnamon and coriander

Sliced mushrooms cooked in olive oil with a cinnamon stick, bay leaves and crushed coriander seeds, and then white wine goes in and boils down until most of the liquid is gone. It is a side dish, and you find versions of it all over Greece.
You need
3 tbsp Greek olive oil
1 cinnamon stick, broken in half
2 bay leaves
1 tbsp coriander seeds, crushed
450 g mushrooms (1 pound), cleaned and sliced
350 ml dry white wine (1 1/2 cups)
Salt and pepper
2 tbsp chopped fresh parsley
Contains: sulfites (wine).
Method
Heat the oil in a deep frying pan over medium heat. Put in the cinnamon, the bay leaves and the crushed coriander seeds and cook them for 1 minute.
Add the mushrooms and turn the heat up to medium-high. Cook them until they are soft, about 5 minutes.
Pour in the wine and turn the heat up high. Stir all the time until most of the liquid has gone.
Season with salt and pepper and scatter the parsley over.
